- 2 cups arugula
- 2 cups baby spinach
- 1 cup shredded rotisserie chicken (or roasted chicken breast)
- ½ apple, thinly sliced (Honeycrisp or Gala work well)
- ¼ cup toasted walnuts (or pecans, if preferred)
- ¼ cup dried cranberries
- ¼ cup crumbled goat cheese (or feta, optional)
- 2 tablespoons MNMLST Italian Dressing
- Salt & pepper to taste
- Optional: squeeze of lemon juice for brightness

Prep the base:
In a large salad bowl, combine the arugula and baby spinach. -
Layer the toppings:
Add shredded chicken, apple slices, toasted walnuts, cranberries, and goat cheese. -
Dress it up:
