INGREDIENTS:

 

  • 2 cups arugula
  • 2 cups baby spinach
  • 1 cup shredded rotisserie chicken (or roasted chicken breast)
  • ½ apple, thinly sliced (Honeycrisp or Gala work well)
  • ¼ cup toasted walnuts (or pecans, if preferred)
  • ¼ cup dried cranberries
  • ¼ cup crumbled goat cheese (or feta, optional)
  • 2 tablespoons MNMLST Italian Dressing
  • Salt & pepper to taste
  • Optional: squeeze of lemon juice for brightness

INSTRUCTIONS:                          

 

  1. Prep the base:
    In a large salad bowl, combine the arugula and baby spinach.
  2. Layer the toppings:
    Add shredded chicken, apple slices, toasted walnuts, cranberries, and goat cheese.
  3. Dress it up:
    Drizzle with MNMLST Creamy Italian Dressing and toss gently to coat everything evenly.
  4. Season and serve:
    Add a pinch of salt and pepper, and a light squeeze of lemon juice if desired. Serve immediately and enjoy!
